The Pi can handle a webcam, albeit with a slower framerate. But they just released a camera designed specifically for the Pi which can deliver 1080p video at 30fps to it.

That's what I'd do, except I'd skip the breadboard. I would solder the resistors directly onto the header (where the wires connect). You need one from SCL to VIN, and one from SDA to VIN. That's what I thought. I'm gonna skip any soldering for the moment though, other than getting rid of the resist...

I've soldered plenty. I'm not exactly the best at that scale, but I've done it. I had a thought though, can I just remove the resistors on the board and put the replacements on a breadboard? I'm sure I have 82k through-holes. I don't mind being tied to a breadboard, at least for now. All I'd have to...

...That Pololu board has 4k7 pullups on-board, so you're going to have to do some brain surgery with your soldering iron, and replace them with something like 82k. The alternative to that, would be to use an I2C bus repeater between the NXT and the board... Would these be suitable? http://www.ebay....
